Remove core from apples and leaf from rhubarb. Chop apples and rhubarb roughly into 2cm squares.
In a saucepan combine the apples, mixed berries, rhubarb and water. Over medium heat add half of the coconut sugar, half mixed spice & half the vanilla extract. Cook for 10-15 minutes, or until apple softens and stirring occasionally.
While the apples are stewing, combine the oats, almond meal, goji berries and coconut flakes with melted coconut oil, stir in the rest of the coconut sugar, mixed spice and vanilla extract. Mix until combined.
Place apples into a 20-25cm baking dish and top with the coconut, oat and almond mixture.
Place in the oven and bake for 25 minutes or until the top of the crumble begins to brown.
